Mascarpone Parmesan and Potato Puff Pastry Tart
For me, so much of cooking is about it being fun and achievable and this recipe totally nails that. So easy yet delicious and takes about 10 minutes to prepare. Perfect for Summer lunches where the food tastes incredible but is minimum effort to make (why slave away when you could be in the garden!).
This is enough for 4 - with generous portions

1 sheet of Puff pastry (I recommend
dorset pastry - however you may need to cut it slightly as their sheets are very long)
150g Mascarpone cheese
50g Parmesan or Manchego Cheese
Waxy potatoes thinly sliced - approx 4-5 (depending on their size)
Rosemary or Thyme sprigs
Drizzle olive oil
Salt and pepper
Follow instructions on the video and then into the oven (approx 200 degrees) for 20 ish minutes until golden brown.
Allow to cool slightly before serving.
Delicious with a fresh chunky dressed salad
