The Conscious Cooking Course is not a typical online cooking course.
It is a year-long journey, split into five modules. You can either sign up for the full year experience, choose individual modules that call to you or buy the course pre recorded and good to go.
Inside, we return to the foundations of real, nourishing food - learning the skills often missed (knife skills, bone broths, sourdough) while also exploring seasonal living, Traditional Chinese Medicine, the mind–body connection and gentle support for the nervous system.
With monthly cook-alongs, check-ins, inspiring guest speakers, an online community and year-round guidance, this is a space to soften, create and remember that food is one of our greatest gifts - and one of our greatest connectors.

This module - over the course of 3 months, guides you through the season of growth, clarity and new beginnings. Learning techniques like - sourdough, fermentation, egg cooking, cooking with grains, layering flavour, knife skills and so much more. We focus on supporting the Liver and Gallbladder in Traditional Chinese Medicine. Joined by nutritional therapist Jo Saunders and two other guest speakers, this module is about planting seeds and moving forward with purpose.
This module guides you through a season of reflection, refinement and release. Techniques like meat cooking and immune-supporting, seasonal recipes plus gentle detoxification. We focus on supporting the Lungs and Large Intestine in Traditional Chinese Medicine - helping you let go of what no longer serves and create space for clarity and renewal.
This is all 5 modules plus 121 sessions with Georgie through out the year. Your relationship to yourself and the kitchen will be very different after one year in this container
Over the course of 3 months, this module guides you through the season of warmth, vitality and connection. You’ll learn techniques like how make fermented drinks (kefirs and kombuchas), explore nourishing summer recipes, how to pan fry seasonal fish and discover ways to support the Heart in Traditional Chinese Medicine. Joined by James Dowler and two other guest speakers, this module also offers practical tools for nervous system support and understanding
This module guides you through a season of rest, restoration and deep nourishment. Techniques covered include meat cookery and working with pastry. Through warming, mineral-rich foods, slow-cooked meals, broths and tonics, we focus on supporting the Kidneys and Bladder in Traditional Chinese Medicine - reconnecting you to stillness, intuition and your inner reserves. Joined by the incredible Judith Elliott, this module also explores meditation and spiritual wellbeing
This module is shorter but is perhaps the deepest and most grounding of the modules - the bridge between seasons, focused on nourishment, stability and connection to self. Through warming, balancing foods such as dhals, bone broths and deeply restorative meals, we support the Spleen and Stomach in Traditional Chinese Medicine, strengthening digestion and emotional harmony. Joined by Louise De Menton, this module also explores the mind/body connection and the importance of our inner voice

WHAT TO EXPECT

Starting week of the 25th Feb

The Conscious Cooking Course is built around the Five Elements of Traditional Chinese Medicine Wood, Fire, Earth, Metal and Water.
Whether you choose to join for the full year or for a single module, you’ll begin with an Introduction to Conscious Cooking, covering the essential foundations: knife skills, browning and building flavour, key store cupboard ingredients and basic nutritional principles.
Each module then focuses on one element and its corresponding season, exploring how to support the body throughout the year through seasonal cooking, lifestyle guidance and a variety of holistic practices that can be gently woven into everyday life.

Once a month we will join to cook together, plus have a chance to check in and ask questions (plus there is an online WhatsApp community group for day to day questions)
All cook-alongs and catch ups will be done on a Wednesday
10:30-12:30 or 6:45-8:30
There may well be times the sessions run over or are indeed less than the two hourly slot

We are so fortunate to have the most wonderful speakers joining us on the course to help bolster the information provided and spread light on more topics in more depth. See list of some of speakers below. All speakers will talk on Wednesday evenings at 6:45

A more in depth understanding on the latest research around Nervous System health and ways to support it - as well as having the wonderful James Dowler as guest speaker on the topic in the FIRE element

Going over the fundamentals of nutrition. Focusing on Micro and Macro nutrients and ways to make up a balanced plate. Jo Saunders will be guest peaker on this topic for the WOOD ELEMENT

Looking at gut health and the digestive system. Learning about fermented food (like sauerkraut and sourdough) as well as ways to soak, sprout and understand more on the inner workings of our gut as well as brain connection

All the recipes provided are quick and bear in mind the demands of modern day life. Plus plenty of tips and tricks in the kitchen, as well as practical advice on making sure your kitchen and home are as friendly as possible

Each module we look at the 5 elements - WOOD, FIRE, EARTH, METAL and WATER.
These elements are a wonderful link between mind, body and spirit and begin to allow us to see how our food can play a much deeper part in our overall wellbeing. As well as touching on TCM and some of the herbal products and practises used

There are many things not taught as we grow up through life. Things like knife skills, making a bone broth, browning vegetables to bring out their flavour - all of which can really help with not only ease but supporting our needs in the kitchen

It is not meant to be a stressful experience or feel like you might be running behind. All zoom guest speakers and cookalongs are normally 1.5 to 2 hours and will be recorded and available to watch at your leisure. Course content can take anywhere from 40 mins to a few hours to read through depending on how deep you want to go with it

Most of the recipes offered are gluten free and many are dairy free, however the course is general and mainly focuses on a whole diet.
However, on module 2 I teach sourdough (made with gluten) but I can teach a gluten free (delicious) sourdough too - you just need to let me know.

Jo qualified in Naturopathic Nutrition at the College of Naturopathic Medicine and has over 13 years of clinical experience. She is a long standing member of the NatureDoc team, led by Lucinda Miller. Jo recently trained as an Inspirational Breathwork practitioner which expands her toolkit in supporting holistic health and wellbeing.

WHY I AM SO PASSIONATE ABOUT WHAT I DO
This course has been developed over a lifetime of searching, learning and trying to understand and break down information that I have found useful in helping me find more balanced and feel more grounded.
I have always been fascinated with how we nourish ourselves - through food but also through other mediums.
I believe in a Mind, Body and Spiritual approach towards overall health, wellness and vitality and this course touches on all of these elements.
