INDULGENT CHOCOLATE NIBBLES

Just the same as making truffles but with added goodness and the perfect way to finish off a meal in style…

 

Makes approx. 21 bites

150 dark chocolate

150ml cream

20g butter

Roasted nuts – approx. 40 each – pistachio, walnuts, hazemlenuts (total of 120)

Approx. 40g each of raisons, cranberries

Pistachio small handful blitzed up for sprinkle over the top (optional)

Seed mix optional

1.      Break the chocolate into small pieces and place into a mixing bowl.

2.      Pour the cream into a small saucepan and bring up to the boil. When bubbling around the edges, remove the pan from the heat and pour directly over the broken chocolate pieces. Stir to combine with a spatula or wooden spoon. When the chocolate is melted, add the butter. There should be enough residual heat to enable it to melt.

3.      Add in the chopped nuts and dried fruit and pour into a lined tray. You can sprinkle with some blitzed up pistachio to make them stand out more for show – freeze dried raspberries are also nice.

4.      Place in the fridge to firm up until solid.

5.      When the mixture is solid, simply cut into bite sized pieces
