BOOSTED NUT CHOCOLATE BITES
I was given as a birthday present a box of cosmic dealer chocolates and my mind was blown away by how delicious this little square of chocolate were - lower in sugar than another things on the market and so simple. So I set about creating my own version.
I have of course boosted them my own way and I am pleased for the money they save me as to buy they are expensive.
Ingredients -
40g macadamia nuts
80g cashew nuts
2 tablespoons inulin powder
1 tablespoon coconut sugar
1 tablespoon collagen powder (I like to use Ossa Organic)
1 teaspoon vanilla extract
1 bar green and blacks dark cooking chocolate 150g
Maldon salt
Method
Place the nuts onto a baking tray and roast for 5-10 minutes until golden.
Take out and place into a nutribullet with the other ingredients and blitz until a smooth paste.
Take a piece of non stick peaking parchment and place the nut paste onto it and shape into a dough. Roll the paste into a square ish shape about 1 pound coin thickness.
Place into a freezer to set for 10 minutes.
Mean while get your dark chocolate and melt.
Take out and cut into squares and dip each square into the dark chocolate and sprinkle on top with some malden salt.
Place onto a fine wire rack or back onto the non stick baking garment and allow to set solid (they should do this quite quickly if frozen).
