Berry Lollies
When the weather warms up there is every reason to be reaching for a nice, refreshing ice lolly. Most lollies are made from slightly diluted cordials and are full of sugar so we have whipped up these ones for some seasonal, healthy inspiration.
Berries are packed full of immune boosting vitamin C which is also important for healthy skin. While berries are in season they will be deliciously sweet and easy to get hold of so make the most of them. You can always use frozen berries (which are often a bit cheaper) and work just as well. Experiment with other berries and flavours: try adding blueberries, more or less milk or different textures, etc.
This makes a wonderful smoothie/milkshake too.
80g raspberries
80g strawberries
1 banana
300ml Koko coconut milk
1 tbsp maple syrup
INSTRUCTIONS
Simply place everything in a blender, or use a hand-held blender, and blitz until smooth.
Pour into freezer lolly moulds and freeze for 4 hours or over until set frozen. Or just pour straight into a glass for a smoothie/milkshake.
Notes
Why not make double and have half for smoothies and freeze the rest for ice lollies?
